Often large Czech knedlíky dumplings are served with it. In Slovakia the dish is called perkelt and is served with Halušky dumplings. Goulash (Polish: Gulasz) is similar to Hungarian Pörkölt, and is also popular in Poland, usually being eaten with potatoes.
In Serbia, goulash () is eaten in most parts of the country, especially in Vojvodina, where it was probably introduced by the province's Hungarian population. It is actually a pörkölt-like stew, usually made with beef, veal or pork, but also with game meat like venison and boar. Compulsory ingredients are meat and onions, usually in 50-50% ratio, paprika, and lard or oil, other ingredients being optional: garlic, parsley, chili pepper, black pepper, cinnamon, bell peppers, carrots, tomatoes, red wine, mushrooms, bacon. Sometimes, goulash is sweetened by adding tomato paste, sugar or dark chocolate at the very end.
Fish goulash (; asa gulaš) is a popular dish in Ethiopia, particularly during the numerous fasting seasons as required by the Ethiopian Orthodox Church. It is usually prepared with a spicy sauce with a tomato and onion base and served with injera or rice.
Some local specialties are ćevapi, burek, grah, sarma, pilav, gulaš (goulash), ajvar and a whole range of Eastern sweets. The best local wines come from Herzegovina where the climate is suitable for growing grapes. Plum or apple rakija, is produced in Bosnia.

Following the crushing of the revolution, the Soviets instituted János Kádár as the leader of Hungary. After an initial period of repressions against the revolutionaries, Kádár implemented a more moderate form of communism, which he referred to as "Goulash Communism." He would rule until 1988, when he was removed from power just before the "revolution" that ended Communism in Hungary.
János Kádár was the General Secretary of the Hungarian Socialist Workers' Party from 1956 to 1988. The historical accounts leading to and including the Hungarian Revolution of 1956 created an atmosphere for Goulash Communism to commence. Bryndzové halušky is a traditional Slovak dish also found in Moravia in the eastern part of the Czech Republic. Kapustové halušky is a similar dish that's made with fried cabbage (and/or onions) and caramelized butter instead of bryndza. Strapačky is another variation of halušky in which stewed sauerkraut is used instead of bryndza. In Hungary, galuska are often eaten with meat stews, such as goulash or pörkölt.

But as Burgenland seemed too close to Communist Hungary for him, he preferred to reside in Zurich with his wife. During the 1970s, Hungary under János Kádár curbed the oppresive state control and implemented a new policy called "Goulash Communism". Bruno Kreisky was then head of government in Austria, and official relations between Hungary and Austria thawed. Commentators, referring to the names of the two politicians, spoke of a new "K & K era".

After the reconciliation of Hungary from the revolutionaries János Kádár's government created a deal with the Soviet Union where they would control foreign affairs while Kádár could employ his domestic control. Through this compromise the Soviet Union used Hungary as a rare opening between the Communism East and the Capitalist West. Hungary started trading and enacting transactions with the West. Much of the capital fuelling the Goulash Communist period came from Western capital.
Textured soy protein (TSP) is made by forming a dough from high nitrogen solubility index (NSI) defatted soy flour with water in a screw-type extruder, and heating with or without steam. The dough is extruded through a die into various possible shapes: granules, flakes, chunks, goulash, steakettes (schnitzel), etc., and dried in an oven. The famous Hungarian hot river fish soup called Fisherman's soup or halászlé is usually a rich mixture of several kinds of poached fish.
Meat is cut into chunks, seasoned with salt, and then browned with sliced onion in a pot with oil or lard. Paprika is added, along with water or stock, and the goulash is left to simmer. After cooking a while, garlic, whole or ground caraway seed, or soup vegetables like carrot, parsley root, peppers (green or bell pepper) and celery may be added. Other herbs and spices could also be added, especially cayenne, bay leaf and thyme.
Fiakergulasch In Vienna, the former center of the Austro-Hungarian Empire, a special kind of goulash had been developed. The Wiener Saftgulasch or the Fiakergulasch on the menu in traditional restaurants is a rich pörkölt-like stew; more onions but no tomatoes or other vegetables are used, and it usually comes just with dark bread. A variation of the Wiener Saftgulasch is the Fiakergulasch, which is served with fried egg, fried sausage, and dumplings named Semmelknödel.
Goulash in Italy is eaten in the region of Friuli-Venezia Giulia and the autonomous region of Trentino-Alto Adige/Südtirol, regions that had been part of the Austro-Hungarian Empire and still are in part culturally and linguistically Austrian. After being fired, Shtykov was demoted to major general on 3 February 1951 and was appointed deputy chairman of Kaluga Oblast. In Polish communities throughout the state Pączki can be found every year on Fat Tuesday (Mardi Gras) in a wide assortment of flavors including lemon, blueberry to custard. Pierogis, goulash, and Polish style sausage are common specialties in many restaurants.
South Tyrolean Speck The Tyrolean cuisine has similarities with the Austrian cuisine and is characterized by its alpine influence. Also the historical influence of the former K.U.K. Monarchy can be found in the Tyrolean dishes. These include dishes such as goulash, Kaiserschmarrn and apple strudel which are consumed in large parts of the Danube monarchy and today still in Tyrol. Since the region is still relatively strong agricultural and peasant today, also many peasant dishes are offered on the farms.

The original dish called bográcsgulyás was a stew, not a soup. According to Balázs's plans, he would have restored the Gothic tower with a suitable Goulash dome, and would have built a new church nave that would fill the gap in the square, which would fit the mass and height of the surrounding buildings. In August, the village is the host of the Vylgynkoranymat festival (lit. young reindeer festival), during which time, a slaughter occurs so that the residents may have sufficient skins for clothing for the forthcoming winter. State control of animation on the one hand constrained artistic freedom of expression while simultaneously ensuring the survival of the medium. During the 1950s, the first modern generation of Hungarian animators came to prominence, creating primarily short animations depicting the Hungarian folk tales and legends that would be a politically safe mainstay of Hungarian animation output throughout the Communist era. This generation would be responsible for creating the first colored animation. A second generation of animators would emerge in the 1960s under the less repressive system of Goulash Communism, and sociopolitical sentiment was for the first time gently hinted at as cartoons developed philosophical themes characterized by morbidity and black humor.

He defeated the remaining rebel forces, then embarked on cautious reforms to create a "Goulash Communism" that differentiated Hungary from its Warsaw Pact neighbors.

Political repression and economic decline led to a nationwide popular uprising in October-November 1956 known as the Hungarian Revolution of 1956, which was the largest single act of dissent in the history of the Eastern Bloc. After initially allowing the Revolution to run its course, the Soviet Union sent thousands of troops and tanks to crush the opposition and install a new Soviet-controlled government, killing thousands of Hungarians and driving hundreds of thousands into exile. But by the early 1960s, the government had considerably relaxed its line, implementing a unique form of semi-liberal Communism known as "Goulash Communism".

American chop suey is an American pasta casserole made with ground beef, macaroni and a seasoned tomato sauce, found in the cuisine of New England and other regions of the United States. Outside New England it is sometimes called American goulash or Johnny Marzetti, among other names. Despite its name, it has only a very distant relation to the chop suey of Chinese and American Chinese cuisine. Though this comfort food is influenced by Italian-American cuisine as well as older New England quick and practical meals like the "potato bargain" and "necessity mess," it is known as "American chop suey" both because it is a sometimes-haphazard hodgepodge of meat, vegetables and Italian seasonings, and because it once used rice, a base ingredient in Chinese cuisine, instead of pasta.
