Beside Mozzarella, mass- produced pizzas often use Parmesan, Romano, Asiago, and other Italian-style cheeses, though some use non-Italian cheeses such as Edam, Emmental and Blue cheese. Unlike other pizzas, like the Napolitan or the Margherita, which have an old, rich, and documented history, the Quattro Formaggi, despite its popularity and preponderance, has a less clear origin, certainly due to its composition being so obvious.

The performance and growth of P. freudenreichii is highly dependent on the presence of Lactobacillus helveticus, which provides essential amino acids. The degradation of L. helvecticus releases a variety of amino acids and peptides. While P. freudenreichii has been found to grow even in the absence of L. helvecticus, some strains of the bacteria were observed lysing in the absence of glutamine, lysine, or tyrosine. The autolysis of P. freudenreichii has been suggested to contribute further to the flavor of the Emmental cheese.
In the 16th century, many Hunzikers (especially from the Emmental) became involved with pacifist Anabaptist movements, especially the Swiss Brethren. The Anabaptist movements typically propounded believer's baptism, voluntary church membership and other positions that contradicted those of the Catholic church, Martin Luther and Ulrich Zwingli. Anabaptists' properties were confiscated. Berne in particular attempted to eradicate all Anabaptists from the canton, sentencing them to galley slavery, flogging, branding and expelling Anabaptist ministers, and, in 1699, established an Anabaptist Bureau specifically to persecute the Anabaptists.

The Schwyzer Alps extend beyond the boundaries of the canton of Schwyz, including parts of the cantons of Glarus, Luzern, Uri and Zug.
It was "Cluster"'s first U.S. release. Apropos Cluster is musically and structurally similar to Grosses Wasser though it lacked the rhythmic tracks of the 1979 release, instead comprising a mixture of gentle, ambient pieces in the four shorter tracks followed by the nearly 22 minute long, more experimental title piece. "Emmental" became the signature track for Cluster. It was included on the 1997 live album First Encounter Tour 1996 and was often performed live by Roedelius at solo concerts during the band's second hiatus.
The Freiherr von Schweinsberg first appears in documents in the 13th century from Wartenstein Castle in the Bernese Emmental. But a branch of the family was in Uri by the mid-13th century and had then occupied the castle, sometimes adopting the castle's name as their family name. They also built Schweinsberg Castle a short distance north of Attinghausen. By 1300, there were two branches: one under Werner II who held the lands in Uri, and another under Diethelm I in the Berner Oberland.
Traditionally made Emmental or Cheddar might contain 10% of the lactose found in whole milk. In addition, the aging methods of traditional cheeses (sometimes over two years) reduce their lactose content to practically nothing. Commercial cheeses, however, are often manufactured by processes that do not have the same lactose-reducing properties. Ageing of some cheeses is governed by regulations; in other cases there is no quantitative indication of degree of ageing and concomitant lactose reduction, and lactose content is not usually indicated on labels.
The new steam tram line ousted Bern's horse buses from the city centre; from then onwards, the horse buses operated a new connection from Wabern to Belp-Steinbach. Meanwhile, plans were developed to extend the steam tramway to Kehrsatz and Belp. A coalition of political and economic interests in various neighbouring communities then vehemently campaigned for the construction of a steam-driven interurban tramway from Bern to Worb. Such a tramway would allow connections at Gümligen with the standard gauge railways to Bern, Thun and Emmental.

Around 1570 the Prince- Bishop of Basel allowed Anabaptist refugees from the Emmental to settle in the seigniory of Erguel, including in the area that would become Mont-Tramelan. The farms in the area were part of the parish of Tramelan, which adopted the Reformed faith in 1530. At the beginning of the 17th Century, a family from Neuchâtel founded the community which was known as Montagnes de la paroisse de Tramelan. The earliest record of the community is from 1647 when it was known simply as la Montagne.

Beaufort cheese is pale yellow, with a smooth and creamy texture and lacks holes like other Gruyère-style cheeses, Comté, Vacherin Fribourgeois or Emmental. Beaufort also has a very distinct aroma, sometime described as strong or mildly pungent and reminiscent of the pastures on which the Tarentaise and Abondance cows graze to provide the milk used for the cheese. Beaufort is commonly used to make fondue because it melts easily. One of the many cheeses that go well with white wine, Beaufort is often enjoyed with fish, especially salmon.
Schwanden village, Brienz, Lake Brienz and the surrounding mountains Aerial view (1952) Schwanden bei Brienz lies in the Bernese Oberland south of the Emmental Alps, which form the natural border between the Bernese Oberland and Central Switzerland. The northern border of the municipality is formed by the peaks of the Brienzer Rothorn and Arnihaaggen. The three streams Glyssibach, Schwanderbach, and Lammbach flow off the slopes of these mountains through the town and lead soon thereafter to Lake Brienz. In the past the streams were dangerous, as they were prone to sudden onrushes of water.
Ricola listed sales of 307.2 million Swiss francs in (2016) and employs 400 workers. Around 200 independent production companies in the surrounding area service Ricola. In order to obtain enough herbs for the production of its herbal drops, the firm contracts over 100 self-managed farms in the Valais, Emmental, Val Poschiavo and at the southern foot of the Jura Mountains, in central Switzerland, and in Ticino. Ricola is known for its commercials featuring Heidi (Ramona Pringle) depicting mountaineers shouting "Ri-co-la!" and blowing through a large Alphorn.
For cheeses such as Emmental the use of heterofermentative bacteria is necessary to produce the compounds that give characteristic fruity flavours and, importantly, the gas that results in the formation of bubbles in the cheese ('eye holes'). Cheesemakers choose starter cultures to give a cheese its specific characteristics. Also, if the cheesemaker intends to make a mould-ripened cheese such as Stilton, Roquefort or Camembert, mould spores (fungal spores) may be added to the milk in the cheese vat or can be added later to the cheese curd.
The term Amish was first used as a (a term of disgrace) in 1710 by opponents of Jakob Amman. The first informal division between Swiss Brethren was recorded in the 17th century between s (those living in the hills) and (those living in the Emmental valley). The s were a more extreme congregation; their zeal pushed them into more remote areas and their solitude made them more zealous. Swiss Anabaptism developed, from this point, in two parallel streams, most clearly marked by disagreement over the preferred treatment of "fallen" believers.

The Big Tasty Bacon variant also contains strips of streaky bacon. This variant is not available in the U.S., only internationally.
The Swiss peasant war of 1653 was a popular revolt in the Old Swiss Confederacy at the time of the Ancien Régime. A devaluation of Bernese money caused a tax revolt that spread from the Entlebuch valley in the Canton of Lucerne to the Emmental valley in the Canton of Bern and then to the cantons of Solothurn and Basel and also to the Aargau. The population of the countryside demanded fiscal relief from their ruling authorities, the city councils of these cantons' capitals. When their demands were dismissed by the cities, the peasants organized themselves and threatened to blockade the cities.

This high- performance machine, known as the Motorlokomotive was operated by one man and allowed very economical operations. After electrification, it was sold to Sulzer, where it was used as a factory locomotive. Today it is owned by the Historic Heritage Foundation of the Swiss Federal Railways (SBB Historic). In order to obtain federal aid for rail electrification, the HWB merged with the LHB and the Ramsei-Sumiswald-Huttwil-Bahn (RSHB) on 1 January 1944 to form the United Huttwil Railways (Vereinigten Huttwil-Bahnen, VHB), which immediately formed a joint venture called the EBT Group with the Emmental-Burgdorf-Thun- Bahn (EBT) and the Solothurn-Münster Bahn (SMB).
To prepare the dish, the sausage is cut into thin slices or strips and placed, along with raw onion rings or cubes, in a vinegar and oil marinade, lightly seasoned with salt, pepper, and sometimes paprika. Common additional ingredients are finely cut gherkins, radishes, parsley or chives. Wurstsalat is normally served with bread and sometimes also with fried potatoes. Popular variants are the Schwäbischer Wurstsalat (Swabian wurstsalat), which is half composed of blood sausage, and especially the Schweizer Wurstsalat (Swiss wurstsalat), which like the Straßburger Wurstsalat (Strasburg wurstsalat) or Elsässer Wurstsalat (Alsacian wurstsalat) also contains Emmental cheese and uses the traditional Swiss Servelat instead of Lyoner sausage.
The return of Tell in times of need was already foretold in the Tellenlied of 1653 and symbolically fulfilled in the impersonation of the Three Tells by costumed individuals, in one instance culminating in an actual assassination executed by these impersonators in historical costume. Tell during the 16th century had become closely associated and eventually merged with the Rütlischwur legend, and the "Three Tells" represented the three conspirators or Eidgenossen Walter Fürst, Arnold von Melchtal and Werner Stauffacher. In 1653, three men dressed in historical costume representing the Three Tells appeared in Schüpfheim. Other impersonations of the Three Tells also appeared in the Freie Ämter and in the Emmental.

Werner II and his son Johann were the Landammann of Uri from 1294 until 1358/59.
Official Seal of the Swiss Cheese Union integrates traditional iconography with the trade's primary product The Swiss Cheese Union (, ) was a marketing and trading organization in Switzerland, which from 1914 to 1999 served as a cartel to control cheese production. To this end, the Swiss Cheese Union mandated production be limited to only a few varieties, chiefly Gruyere and Emmental, and bought the entire production and distribution of cheese at prices set by the Swiss Federal Council. It also coordinated the national and international marketing for these three varieties of cheese. The Swiss Cheese Union was successful in campaigning for cheese fondue and raclette becoming national dishes in Switzerland.
Langnau im Emmental station A BLS RABe 535 Lötschberger in multiple unit with a Nina The BLS RABe 525, also known as NINA or Nina, is a Swiss electric multiple unit built by Bombardier Transportation with electrical equipment by Alstom. The train is principally used by the BLS AG on Bern S-Bahn services, although small quantities have been built for other railways. An updated version exists as the BLS RABe 535, also known as Lötschberger, also exists with a revised front end and an interior intended for longer distance services. The articulated trainset was designed to be built with from two to six sections and with two to six motorized axles.
The curds are finally cut into portions, filled into cheese molds, stacked on top of each other, and the remaining excess moisture is forced from the cheese with a constant of pressure for at least 24 hours, before the finished cheese is stored to age. For every 10 pounds (10 kilograms) of milk and whey, Beecher's will typically create 1 pound (1 kilogram) of finished cheese. Cheese being drained of moisture at Beecher's Handmade Cheese Beecher's cheeses differ from similar cheeses in that they mix cheese growth cultures in unusual ways. For example, their signature "Flagship" cheese includes cultures typically used for non-cheddar cheeses, such as Gruyère and Emmental, changing the nature, flavor, and texture of their cheddar.
At the beginning of March, the people of the neighbouring Bernese Emmental valley joined their cause, addressing similar demands at the Bernese authorities. Both cantons called upon the other uninvolved members of the Old Swiss Confederacy to mediate in the conflict, but at the same time, the Tagsatzung, the diet of the cantons' governments, also began to prepare for a military resolution. Troops from Schaffhausen and Basel were sent towards the Aargau, but this immediately solicited an armed resistance amongst the population such that the troops had to withdraw.Stüssi-Lauterburg 2003, p. 39f. On March 18, 1653, the mediating Catholic central Swiss cantons proposed in Lucerne a resolution that fulfilled most of the peasants' demands, especially the fiscal ones.
The main shareholders of the Bern-Lucerne Railway were the Canton of Bern and the Canton of Lucerne as well as some municipalities. However, many Emmental municipalities and the City of Bern showed little enthusiasm for subscribing for shares because they had already lost a significant amount of money in the failed Swiss East–West Railway (Ostwestbahn, OWB). Nevertheless, at the end of 1872, the Bern-Lucerne Railway had accumulated over CHF 14 million in the form of stocks and bonds, while construction costs were estimated at CHF 13.7 million. The company acquired the Gümligen–Langnau section from the Bernese State Railway (Bernische Staatsbahn, BSB) for CHF 6.6 million and rolling stock from the same source for CHF 703,500.
The Swiss East–West Railway (German: Schweizerische Ostwestbahn, OWB) was a former Swiss rail company, which planned to build a line to compete with the network of the Swiss Central Railway (German: Schweizerische Centralbahn, SCB) in central Switzerland on which construction commenced in 1857. Jakob Stämpfli, a federal politician, established the company to build a line between La Neuveville (on Lake Biel in western Switzerland) and Zürich via Bern, Langnau im Emmental, Luzern and Zug. It began construction without raising sufficient finance to guarantee its completion. It opened a line between Frienisberg (near Le Landeron) and Biel (now part of the Jura foot line on 3 December 1860, but then went bankrupt.
The Priory was dependent on Cluny Abbey and normally had a prior and two to four monks from Cluny. In 1148, it had two priories that were dependent on Rüeggisberg, in Röthenbach im Emmental and Alterswil. At its peak the priory controlled estates throughout what is now the Canton of Bern, including Guggisberg, Alterswil, Plaffeien and Schwarzenburg as well as scattered farm houses and vineyards on the shores of Lake Biel. The priory was one of the most important monastic houses of Switzerland during the Middle Ages, but in the late medieval period decline set in, and in 1484 it was incorporated into the newly built college of the Augustinian Canons of Bern Minster.
In 1857, Federal Councilor Jakob Stämpfli established the Swiss East–West Railway (Schweizerische Ostwestbahn, OWB), which was intended to implement a second railway line through the Central Plateau in direct competition with the Swiss Central Railway (Schweizerische Centralbahn, SCB). The Basle-based SCB had acquired licenses to build and operate railways in Aarau, Lucerne, Bern and Biel and controlled the rail traffic in the Central Plateau. The OWB was to compete as a Bern-based railway company in direct competition with the SCB. The OWB projected a railway line from La Neuveville via Biel, Bern, Langnau im Emmental, Lucerne and Zug to Zürich and began construction without securing the funding for the line.
Bern, which had not participated in the Sempach war, took the opportunity and began its conquest of what would become the canton of Bern, sending military expeditions into the Jura, the Oberland, Emmental and Aargau. Lucerne by 1389 was able to consolidate its control over the towns around lake Sempach, Willisau and the Entlebuch, largely corresponding to the extent of the modern canton of Lucerne. Glarus also took the opportunity to rebel against Habsburg control and established its independence in the Battle of Näfels in 1388. A new peace agreement between the confederacy and Austria was concluded on 1 April 1389, valid for seven years, extended to 20 years on 16 July 1394.
Nicklaus Gerber, who moved from New York, started the first cheese factories in New Glarus, beginning with the area's first Limburger cheese factory four miles (6 km) southwest of New Glarus. He later built America's first Swiss cheese (also known as Emmental in Switzerland) factory on the Dietrich Freitag farm outside of New Glarus in Washington township.Emery A. Odell, "Swiss Cheese in Green County," (1936) Following the end of the Civil War, and with the evolution of the cheese production, the prosperity of New Glarus and neighboring communities grew. At its peak in 1905, New Glarus boasted 22 cheese factories; so many it was said the crossroads of the town were congested with daily deliveries of milk to the Limburger and Swiss cheese factories.
The specific epithet deliciosa means "delicious", referring to the edible fruit, while monstera means "monstrous", in reference to the size that this plant can grow to, over in many cases. Its popular name as a houseplant of "Swiss cheese plant", or just "cheese plant", is commonly stated to refer to the holes which develop in its leaves similar to the holes in some Swiss cheeses such as Emmental cheese. Monstera adansonii, which also has holes in the leaves, is also called "Swiss cheese plant", or Swiss cheese vine. Other common names include delicious monster, fruit salad plant, fruit salad tree (in reference to its edible fruit, which tastes similar to a fruit salad),Daleys Fruit Tree Nursery, Kyogle, New South Wales, Monstera Fruit Salad Tree.
The Uri Alps (also known as Urner Alps, ) are a mountain range in Central Switzerland and part of the Western Alps. They extend into the cantons of Obwalden, Valais, Bern, Uri and Nidwalden and are bordered by the Bernese Alps (Grimsel Pass) and the Emmental Alps to the west (the four lakes: Lungerersee, Sarnersee, Wichelsee, and Alpnachersee), the Schwyzer Alps to the north (Lake Lucerne), the Lepontine Alps to the south (the valley of Urseren with Andermatt) and the Glarus Alps to the east (Reuss). The Uri Alps are composed of two distinct groups separated by the Susten Pass. The Dammastock massif on the south is the most glaciated part while the northern part, which culminates on Titlis, has lower summits but greater extent.
In Romania and Moldova, cașcaval () is used to refer to a number of types of yellow medium and semi hard cheeses made of sheep's or cow's-milk. The best known varieties of cașcaval in Romania are dobrogea (from sheep's milk only), penteleu (from mix of sheep's and cow's milk), dalia and rucăr (both from cow's milk only). But the term is often used by extension as a generic name for all semi-hard yellow cheeses such as the Swiss Emmental cheese, the Dutch Gouda and the British Cheddar, or anything that looks similar to cașcaval. During the communist regime, because of the food shortages, Romanian housewives developed a technique for a homemade pressed cheese, similar to cașcaval, made out of milk, smântână, butter and eggs.
In order to obtain federal aid for rail electrification, the LHB merged with the HWB and the RSHB on 1 January 1944 to form the United Huttwil Railways (Vereinigten Huttwil-Bahnen, VHB), which immediately formed a joint venture called the EBT Group with the Emmental-Burgdorf-Thun-Bahn (EBT) and the Solothurn-Münster Bahn (SMB). The VHB commenced electrical operations on the Langenthal–Huttwil line at 15 kV AC 16 ⅔ Hertz on 8 July 1945. The double- track section between Madiswil and Lindenholz was placed into operation on 18 June 1996. The VHB merged with the other railways of the EBT Group in 1997 to form the Regionalverkehr Mittelland (RM), which was merged in turn with the BLS AG in 2006.
The Canton of Bern attempted to make its own policy in relation to its railways. At the initiative of its Federal politician Jakob Stämpfli the Swiss East–West Railway (German: Schweizerische Ostwestbahn, OWB) started building a line in 1857 - to compete with the Swiss Central Railway - between La Neuveville (on Lake Biel) and Zürich via Bern, Langnau im Emmental, Luzern and Zug, but without raising sufficient finance to guarantee its completion. In June 1861 it went bankrupt; the Canton of Bern took over the completed section from La Neuveville and Langnau and incorporated it as the Bern State Railway (German: Bernische Staatsbahn, BSB), which continued building the line to Lucerne. The missing section from Langnau to Entlebuch and Lucerne was not completed until 1875.
The Harderkulm (also referred to as Harder Kulm, since the top station of the funicular is called that way) is a viewpoint at in the Berner Oberland region of Switzerland, overlooking the towns of Interlaken and Unterseen. It is located at the western end of the Harder, which in itself is the most western, forested ridge of the about long, prominent mountain range dominating the north shore of the Lake of Brienz. Harder Kulm The viewpoint belongs to the municipality of Unterseen in the canton of Bern with the slopes shared between the municipalities of Unterseen and Interlaken. The viewpoint offers extensive views across Interlaken, the alluvial land called Bödeli, and southwards up the valley of the river Lütschine to the high peaks of the Bernese Alps, whilst itself forming part of the Emmental Alps.
Smažený sýr () or vyprážaný syr () – both meaning "fried cheese" – is a Czech and Slovak cheese-based dish that is widely consumed in both countries of the former state of Czechoslovakia. It is a common street food in both countries. These both lie in the direct line of a valley that stretches with scarcely a break in between the Uri Alps and the Emmental Alps. At the eastern end of the Gersauer Becken, where the containing walls of the lake-valley are directed from east to west, it is joined at an acute angle by the arm of Uri, or the Urnersee, lying in the northern prolongation of the deep cleft that gives a passage to the Reuss, between the Uri Alps and the Glarus Alps.John Ball, The Alpine guide, Central Alps, p. 153, 1866, London View of the Lake of Uri from Brunnen southwards The Urnersee occupies the northernmost and deep portion of the great cleft of the Reuss Valley, which has cut through the Alpine ranges from the St Gotthard Pass to the neighbourhood of Schwyz.
Big N' Tasty/Big Tasty – the Big N' Tasty, introduced in 1997 in California, was a beef patty with ketchup, cheese, mayonnaise with grilled, diced onions, pickles, leaf lettuce, and tomatoes. It was devised to resemble Burger King's Whopper sandwich. It is also known as the Big Xtra in Slovenia and most of Canada; the McXtra in Quebec, Canada; the McFeast Deluxe in Australia; the Big Tasty (without the 'N') in Brazil, Bulgaria, France, Germany, Italy (without ketchup), Ireland, The Netherlands, Poland, Portugal, Russia, Sweden and the United Kingdom; the Quarter Pounder Deluxe in South Africa; and the McNifica (a play on Spanish magnifica, 'wonderful') in Mexico and Latin America. The Big Tasty configuration is somewhat different, consisting of a third-pound (150 g) beef patty, sesame seed bun, lettuce, tomatoes, onions, Emmental cheese, and Big Tasty sauce (which has a smoke flavor).

Aarau The reconstructed Old High German name of Aargau is Argowe, first unambiguously attested (in the spelling Argue) in 795. The term described a territory only loosely equivalent to that of the modern canton, including the region between Aare and Reuss rivers, including Pilatus and Napf, i.e. including parts of the modern cantons of Bern (Bernese Aargau, Emmental, parts of the Bernese Oberland), Solothurn, Basel-Landschaft, Lucerne, Obwalden and Nidwalden, but not the parts of the modern canton east of the Reuss (Baden District), which were part of Zürichgau. Within the Frankish Empire (8th to 10th centuries), the area was a disputed border region between the duchies of Alamannia and Burgundy. A line of the von Wetterau (Conradines) intermittently held the countship of Aargau from 750 until about 1030, when they lost it (having in the meantime taken the name von Tegerfelden).
The Bernese Alps (, , ) are a mountain range of the Alps, located in western Switzerland. Although the name suggests that they are located in the Berner Oberland region of the canton of Bern, portions of the Bernese Alps are in the adjacent cantons of Valais, Fribourg and Vaud, the latter being usually named Fribourg Alps and Vaud Alps respectively. The highest mountain in the range, the Finsteraarhorn, is also the highest point in the canton of Bern. The Rhône valley separates them from the Chablais Alps in the west and from the Pennine Alps in the south; the upper Rhône valley separates them from the Lepontine Alps to the southeast; the Grimsel Pass and the Aare valley separates them from the Uri Alps in the east, and from the Emmental Alps in the north; their northwestern edge is not well defined, describing a line roughly from Lake Geneva to Lake Thun.

Classic examples of Helvetism usage throughout entire literary works are found in a large part of Swiss literature, notably Jeremias Gotthelf's novels located in the Emmental; a contemporary example would be Tim Krohn in his Quatemberkinder. Another group, the most notable of whom is Peter Bichsel, deliberately use Helvetisms to arouse a sort of emotional attachment to the readers' home country: Bichsel is notorious for using dialectal words like Beiz (instead of Kneipe [English: "pub"]), or Kasten (instead of Schrank [English: "cupboard/cabinet/closet"]) in his "San Salvador" short story. Lastly, there is yet another group of authors whose readers are known to be located all over the German-speaking territory (Germany, Austria, Switzerland as well as some smaller minorities in other European countries) and therefore traditionally refrain from using any Helvetisms in their literary works. In addition, words which are used outside Switzerland, but which originate from Swiss German may be called "Helvetisms".
