There is the insistent smell of broiled dry-aged steak that hits me the minute I open the door and sometimes sooner, while I'm still outside on the South Williamsburg sidewalk, producing a raised pulse, a quickening of the senses and a restlessness familiar to anyone who has seen a tiger that has just heard the approach of the lunch bucket.

But they are also broiled under minced seaweed and Parmigiano-Reggiano in a nervy, compelling take on oysters Rockefeller; poached in sherry and cream along with late-summer succotash for a soup that is halfway between oyster stew and chowder; and steamed with garlic, vermouth and butter, a suave oyster-dunking sauce that becomes a soup once you add oyster crackers.

The reservations-only, 16-seat dining room at Tokyo Record Bar is framed by shoji screens and a cherry blossom ceiling, and, depending on the night, offers two or three seatings serving up a seven-course izakaya tasting menu (signature bites include shiso butter-topped broiled oysters and 60-second New York strip steak katsu), while a D.J. spins guest requests.

Despite the fact that my mother was an excellent cook and a shellfish fanatic, and despite the fact that I grew up along Massachusetts' northern coast, home to the Great Marsh and some of the best clam flats on planet earth, broiled haddock with a spritz of lemon (and some bagged rice pilaf on the side) was about as adventurous as I got as a pre-teen.
