While the cucumber marinated on the serving bowl, she drained the tuna from its oil and scattered it — along with pieces of avocado and sliced pickled onion — all over the cucumber, building the salad and its dressing up in layers, by piling everything on.
Then move on to the marinated dishes, like citrusy salmon with passion fruit, ginger and cilantro (277 euros), followed by Sobral's superlative version of amêijoas à Bulhão Pato — a steaming bowl of plump clams seasoned simply with lemon, garlic and more cilantro (225 euros).

Guk-which-means-soup is a shimmering broth that Mr. Park, the chef, makes from fermented tomatoes and kelp; chilled and poured over scallop slices layered between slivers of green tomato that have been marinated in Korean fig vinegar, the broth has an electrifying sweet-sour balance.
The chef Saul Bolton and Great Performances (a catering and restaurant managing company), who run the restaurant, have invited the chef Sue Torres to kick off the round of special menus with dishes like shrimp flautas, sweet plantain gorditas cakes and pan-roasted marinated red snapper.

The kitchen is already in practiced rhythm, and the first dish, like many on the menu, had the hallmarks of Noma's creative perfectionism: a raft of crisp steamed romaine stems marinated in a paste made from the leaves, served with aged turbot roe and adorned with marigold petals.

Sitting on a shady terrace sipping a white wine from the Loire Valley, we enjoyed an appetizer of tuna rillettes, smoked marlin and tiny cubes of raw mahi mahi marinated in coconut milk, scallions and Scotch bonnet chiles, followed by rare tuna with a slab of melting foie gras.
A Caesar-esque grilled romaine is topped with soy-marinated quail eggs, jako (tiny sardines) and a creamy sesame dressing; silky inaniwa udon noodles (a specialty of Kyogoku's mother's hometown) are paired with tempura — made with whatever local produce looks best at the Union Square Greenmarket that day.
But "this is New York kaiseki," he says, so he commits to richness and pairs the ramps with wild Alaskan king salmon, an oily fish that is marinated in bourbon — instead of sake — chosen partly for aroma and partly for provenance: It's made nearby at Brooklyn's Kings County Distillery.

Lee Anne Wong, a Honolulu chef who is the consultant for Sweetcatch, explained that in Hawaii, the fish for poke is marinated for about 45 minutes before it goes on sale, it's cut in larger pieces than you'll often find in New York or Los Angeles, and there are few additional ingredients.

Halibut with a market's worth of mixed mushrooms in miso and lemon juice was an ideal example of how to cook and serve fish, but I can't say the same about the nondescript king salmon or the sea scallops in a sauce whose naked acidity was intensified by apples marinated in vinegar.
Mar's requisite gambas al ajillo , large head-on shrimp with fried garlic slivers, can advisedly be accompanied by chunks of red snapper marinated in vinegar and a pimenton-heavy Canary Islands spice mixture, a forest of fat white asparagus blanketed in mayonnaise, and a rich squid-ink rice, salty like the ocean.
Upstairs is a small bar where you can slither into a pale-leather booth to idle over smartly conceived snacks like soy-marinated scallop jerky; beef tartare, mixed with red and black pepper, and under a snowfall of pecorino; or fried wings stuffed with fried rice and dusted with ground Sichuan peppercorns.
One of those people happened to be Andy Ricker, the chef and James Beard Award-winning cookbook author who introduced many Americans to ballsy northern Thai dishes like khao soi (egg noodles in a curry broth with fried noodles), kai yaang (marinated grilled chicken), and sai ua (lemongrass-scented sausage) at Pok Pok PDX.
Between tossing things on and pulling them off, I never once had to come within arm's length of the FirePit, and certain dishes that I felt would be better off contained in a skillet cooked wonderfully — especially the marinated tuna belly, which I was afraid might fall apart if placed directly on the grate.

When De Guzman, a British-born Filipino, traveled to the Philippines in 2016 for a culinary research trip, his favorite turo turo was chicken inasal (or char-grilled chicken), a dish from Bacolod City in the Western Visayas region, which is typically marinated in calamansi (a type of citrus fruit), coconut vinegar, and achiote.
His most famous dish, cobia al pastor, recombines a traditional taco filling of fatty pork grilled with pineapple into a plump local fish fillet that is marinated in chile paste, then sautéed in butter, served with a purée of caramelized pineapple and a crisp, palate-prickling dice of raw onion, cilantro and serrano chiles.

The ceremony menu, developed by Wolfgang Puck (who knows a thing or two about cooking for award shows), will feature roasted acorn squash with toasted farro topped with lolla rossa lettuce, almonds and cider vinaigrette; green tea marinated salmon with bulgur wheat, tofu, and sweet soy; and spiced chicken with Morroccan cous cous and saffron aioli.
"The Outstanding Performance" is a mix of Chopin Potato vodka, infused fresh cucumbers, aloe water, fresh elderflower, lime juice and infused lemon peel garnish, while the "Fix It in Post" is a Clase Azul Plata tequila-based cocktail with La Pinta pomegranate tequila liqueur, fresh marinated pineapple juice, fresh lemon juice, agave raw nectar, and a jalapeño garnish.

There, you can find vegetable-focused dishes like roasted Maui onion and beet confit with hijiki, but in Upcountry, you can simply go to the source: Twice-daily tours through the orchards conclude with a family-style meal of ahi tuna marinated in lemongrass oil, roasted rosemary chicken and heaping platters of grilled fennel, chard and eggplant.

But the imaginative seafood-rich dishes are exceptional: roasted, basted catfish in a juice made from its own head and tail on a velvety sweet purée of lotus seed boiled in coconut oil; or perhaps a seaweed-wrapped mackerel nugget topped with salmon roe on a cube of smoked yuzu-marinated rice larded with river shrimp and pink petals.
Regulars often tick off choices on the hors d'oeuvres list, a separate sheet of paper that comes with a golf pencil: a poached and oil-marinated sardine; crisp sticks of celery root in rémoulade that may need more mustard; ham with flageolets and a handful of other dried beans, each cooked until just tender; the egg mayo, on the menu since opening day.

We head to Yarra Valley Dairy to sit down and have a cheese platter, but unfortunately there are no tables left, so instead we do a complimentary tasting, and I buy two different types of marinated goat's feta (one in saffron, garlic, and herbs, and one in chili oil) and a cow's cheese spread with dill to put on bagels for breakfast.
The Taco Truck sells authentic Mexican street fare, including Al Pastor Tacos (marinated pork, onion, cilantro, pineapple, fresh green salsa), Aguacate Tacos (crispy avocado, black beans, sesame seeds, pickled onion, tortillas fritas, chipotle salsa) and a Barbacoa Burrito (braised beef, onion, cilantro, roasted red salsa, red rice, black beans, crema), to name a few of the items on their menu.

Basically if you could serve it on a lettuce leaf, it was a salad — a square of frozen cream cheese, a hollowed-out turnip filled with marinated peas, some cut-up bananas and nuts packed into a banana skin, and — one of my favorites in this genre — a fruit salad inside a little pen made of four saltines, and you tied a red ribbon around the whole thing.
Legend has it that Dongpo, also a gastronome, invented the slow-cooked dish by accident; but no matter its origins, it eventually emerged as a popular Chinese delicacy — one so beloved that nearly 200 years ago, an anonymous Qing dynasty artist working for the emperor immortalized its oil-slicked form, sculpting a piece of jasper into a fleshy lump meticulously finished with wrinkles, dimples, and even a soy sauce-marinated rind.
