Cooley also released a single pot still poitín, which was available at the Celtic Whiskey Shop in Dublin and at Dublin Airport, with the intention of expanding production to release it in other markets such as the US. The discussion was splendidly stimulated by Professor Hawthorn's supply of malt whiskey from a Hebridean distillery. The group included Emil Mark and George Stewart from Davis, California, a fellow Canadian Bill Geddes, Dean of Agricultural Biochemistry at the University of Minnesota, Professor H D Kay from the dairy research institute at Reading, Tim Anson, an American employed with the Lever Organisation. A blended whiskey (or blended whisky) is the product of blending different types of whiskeys and sometimes also neutral grain spirits, colorings, and flavorings. It is generally the product of mixing one or more higher-quality straight or single malt whiskey with less expensive spirits and other ingredients. This typically allows for a lower priced finished product, although expensive "premium" varieties also exist. Some examples of blended whiskey include Canadian Mist, Jameson Irish Whiskey, Seagram's Seven, Kessler Whiskey, Hibiki, and the various Scotch whisky blends sold under the Johnnie Walker brand.

When first constructed, the distillery initially had the capacity to produce up to 1.8 million litres of pot still and malt whiskey per annum using four pot stills. However, provision has been made for the installation of a further two pot stills in the distillery, which would double this capacity to 3.6 million litres per annum. Following an additional €25 million investment, a grain distillery and bottling plant were added in 2017. The installation of a grain distillery means that the distillery can now produce all three components (pot still, malt, and grain whiskey) of its Tullamore D.E.W. blended whiskey on-site.

Fiddler Unison Bourbon is a marriage of a high-malt bourbon distilled in Atlanta and a "foraged" high-wheat bourbon. Fiddler Georgia Heartwood Bourbon finishes the "foraged" high-wheat bourbon on Georgia oak harvested and hand-charred by ASW Distillery's Head Distiller. Fiddler Unison Bourbon won a Silver Medal and Fiddler Georgia Heartwood Bourbon won a Gold Medal at San Francisco World Spirits Competition. Resurgens Rye was the first whiskey distilled at ASW Distillery's Atlanta facility and is Atlanta's first rye since Prohibition, unique for being a single malt whiskey made from 100% malted rye grain, in contrast to the cereal rye comprising the base of most whiskey made from rye.

In 1997, Dean Long applied for a license from the state of Massachusetts to manufacture high proofed spirits with the hope to produce grappa and fruit brandies at a point in the future. As whiskey can be distilled from beer, Dean Long, Randy Hudson, and Jay Harman saw a potential for a distillery making whiskey. In Fall 2000, Dean’s license was approved and they began making Notch whiskey, a single malt whiskey that is “Not Scotch”. As Notch whiskey is aged for a minimum 5 years, Long, Hudson, and Harman began to make vodka from organic corn that was triple distilled and blended with sand-filtered Nantucket water from Well #888.

The distillery's "pear in a bottle" eau de vie Based on the traditional eau de vie de Poire Williams, Clear Creek Distillery's pear eau de vie is its most popular product, and it also sells a limited edition version with a pear grown inside the bottle. It also makes other traditional varieties of fruit brandy such as an aged apple brandy made from Golden Delicious apples, grappa from Oregon wine grapes, framboise, Mirabelle plum eau de vie, kirschwasser, and slivovitz. More unusually, Clear Creek produces an eau de vie that includes some of the spring buds of the Douglas fir tree. Clear Creek also makes a variety of fruit-based liqueurs and McCarthy's Single Malt whiskey.

6-Acetyl-2,3,4,5-tetrahydropyridine 2-Acetylpyrroline The Maillard reaction is responsible for many colors and flavors in foods, such as the browning of various meats when seared or grilled, the browning and umami taste in fried onions, and coffee roasting. It contributes to the darkened crust of baked goods, the golden-brown color of French fries and other crisps, of malted barley as found in malt whiskey and beer, and the color and taste of dried and condensed milk, dulce de leche, the Sri Lankan confection milk toffee, black garlic, chocolate, toasted marshmallows, and roasted peanuts. 6-Acetyl-2,3,4,5-tetrahydropyridine is responsible for the biscuit or cracker- like flavor present in baked goods such as bread, popcorn, and tortilla products. The structurally related compound 2-acetyl-1-pyrroline has a similar smell, and also occurs naturally without heating and gives varieties of cooked rice and the herb pandan (Pandanus amaryllifolius) their typical smells.
