While she previously told PEOPLE that she "most certainly" planned on opening a restaurant of her own, she is now focused on eating at the world's most-acclaimed restaurants, including the Chef's Table at Brooklyn Fare and two-Michelin-starred Noma in Copenhagen, Denmark.
Founded by Noma restaurant's chef/owner/visionary, René Redzepi, MAD (the Danish word for "food") is a not-for-profit organization that aims to spread ideas, forge new relationships, discuss injustices and update – in real time – the global playbook for an ethical, sustainable food culture.
"What you're seeing in NoMa is just the surge," said Douglas Firstenberg, a founding principal of StonebridgeCarras, based in Bethesda, Md., which recently broke ground on its third office building in Constitution Square, the largely government-leased office complex next to the Metro station.

But neither its safety nor its relative status as the tofu of the sea is the primary reason why fishermen dive for it, nor why Thymann was there photographing it, nor even why a restaurant like Copenhagen's acclaimed Noma would consider putting it on the menu when it opens its pop-up in Tulum on April 12.
Joining Harry and company are his old chums and allies in the fight against darkness, the goofy Ron Weasley (Paul Thornley, delightful) and the perpetual A-student Hermione Granger (Noma Dumezweni, a black actress whose casting provoked controversy but who is perfect in the part), now married and the parents of a Hogwarts-bound girl, Rose (Cherrelle Skeete).

Back home at the keyboard, I'd calculate how many words to spend on sensory pleasures and how many on the $2,000 or so that my employers were on the hook for, whether it was "worth it" and whether the local standard of living was likely to be helped by the attention Noma had brought to Mexican ingredients.
Book ahead for dinner at this cozy spot, where the chef Álvaro Clavijo's impeccable pedigree (he's worked at Noma and Per Se) is put to good use in the surprisingly approachable menu of dishes that recently included grilled mushrooms and squid in a nettle broth, lamb ribs dusted with feta and sunflower seeds, and corn-flavored ice cream.
Its commitment to local, pure and beautiful food has proved to be more than a trend: It is a durable international movement, led by chefs like René Redzepi of Noma and Christian Puglisi of Relae in Copenhagen, Gunnar Gislason of Agern in New York and Esben Holmboe Bang of Maaemo in Oslo (the only restaurant in Norway to earn three Michelin stars).
Although the bridge itself is unremarkable, the impressive panorama spans both the past and future: historic Nyhavn with its colorful rowhouses and 17th-century canal; influx Papiroen island; the gray stone building that formerly housed Noma (the acclaimed New Nordic restaurant reopened nearby in February); and modern architectural landmarks, including the neo-futuristic Opera House and the Royal Library with its angular black facade.
In the interim, he had managed pop-ups in Tokyo, Sydney, and Tulum, Mexico, each of which had given him and his extensive team inspiration for the 20-or-so course tasting menu — the theme of which changes with the season (we sampled the summer version, which was almost entirely created from vegetables; fall has seen a switch to game) at what followers are calling Noma 2.0.
And while his Guy Fieri takedown and love letter to (the now defunct) Times Square Señor Frog's are the stuff of legends, his recent article about why he's not reviewing the expensive and exclusive pop-up restaurant Noma Mexico contains enough musing on the ethics and pitfalls of any critic's job — especially those who deal with expensive, exclusive cultural goods — that I haven't stopped thinking about it since I read it.
That you could be interested in food and participate in being interested in that restaurant, Noma, without ever going there or even aspiring to go, or without ever going to New York and going to Mission Chinese because there's enough stuff wherever you live and you can order it and you can consume it online, that you can participate in food culture without obsessing about that restaurant or that chef. Right.
But when you are eating something at Noma that tastes like much more than the sum of its parts, when you realize that few of the restaurant's many imitators load as much depth and complexity into their cooking, when you start to lose your bearings and can't quite figure out what is happening, it can be helpful to recall that just out of sight is an entire room full of special sauce.
