Chutney, one of the few Indian dishes that has had a lasting influence on English cuisine, is a cooked and sweetened but not highly spiced preparation of fruit, nuts or vegetables. A bon viveur, two chicken dishes were named after him, including Chicken Demidoff (elaborately stuffed, smothered, tied up and garnished), and the Demidoff name is also applied to dishes of rissoles and red snapper.
