All of this is a huge problem not only because it creates needless food anxiety, but also because it causes a huge missed opportunity to truly improve our health: Instead of demonizing all processed foods, we'd be much better off learning how to spot a decent processed food.

A 2015 report titled "Ultra-Processed Food and Drink Products in Latin America: Trends, Impact on Obesity, Policy Implications" pointed out that the per capita sale of ultra-processed foods and drinks increased by 27 percent in Latin America between 2000 to 2013, directly contributing to a major upswing in obesity rates.

A recent report by the Institute for Development Studies and Oxfam called "Precarious Lives: Food, Work and Care After the Global Food Crisis" uncovered some pretty jarring results about the rise of fast food and processed food in countries hit hard by the global food crisis that emerged over the last decade.

The illnesses noise and light pollution induce, from insomnia and depression to hypertension and ischemic disease, impair our well-being and restrict the range of bodily possibilities; the conditions caused by industrially processed food lead to poor health, lower quality of life and the expense of enormous resources required to treat them.

"Consumers want to eat more fruits and vegetables and less processed food, so when you have fruits and vegetables that need to be flash frozen and then transported across the country to the user, that is definitely taking an uptick in demand for this space," said Michael Carroll, an analyst with RBC Capital Markets.

That means trying to mimic it all the way down to the puff it gets in an oven, and while some companies like Impossible Foods go after the look and feel of a burger, Lagally wants to focus on the much lower-hanging fruit of more processed food — which makes up a significant chunk of chicken consumption.

However, the U.S.D.A.'s definition of "processed food" also includes "healthy" foods like frozen vegetables, dried fruit, canned beans and whole-wheat bread, as well as problematic ones like ready-to-heat meals, candy and soda.

"What we have is a war between two food systems, a traditional diet of real food once produced by the farmers around you and the producers of ultra-processed food designed to be over-consumed and which in some cases are addictive," said Carlos A. Monteiro, a professor of nutrition and public health at the University of São Paulo.

The NOS says that clean eating—which can mean different things to different people, but generally means emphasizing meat and fresh produce and avoiding processed food—is now the "most common diet for those aged 25 and under" in the UK. But to the extent that any diet limits calcium, the NOS says, it is a "ticking time bomb," portending significant future problems.

That's the issue underlying giving consumers a real choice by providing them with information to make their own determination – whether it's the coming calorie information on menus or the revised Nutrition Facts Label for processed food that will disclose for the first time how much added sugar is in a product and how that compares to the maximum they should have on a daily basis.
