It may seem that Masa Takayama, the chef and owner of the sushi mecca Masa, earned mythical status owing solely to the sheer audacity of his prices—at $595 per person, before drinks and tax, dinner at Masa must be the most expensive prix fixe in the city—but it's worth remembering that he got there because of the ethos he has built around his skills with fish.
