Saundby devoted much of his retirement to his role as Vice-Chairman, Council of Territorial and Auxiliary Forces Association, for which he was appointed a Knight Commander of the Order of the Bath. Saundby was the chair of the council of Royal Air Forces Association (as well as life vice-president), president of the Royal British Legion (metropolitan area) and in 1960 was appointed deputy-lieutenant for Berkshire. Fly-fishing was a great passion and Saundby also became the president of the Piscatorial Society, editing their centenary publication The Book of the Piscatorial Society 1836–1936. Saundby was also a keen lepidopterist and a Fellow of the Royal Entomological Society.

The rest of the album (Cuisine, the first 13 tracks) was recorded between 1989 and 1991 at Terse Tapes in Sydney, Australia, except "Twister", which was recorded live in Riverdale, California.

In the Isle of Man, he bought property, farms and river banks with a view to running a fishing lodge based at Tholt-y-Will in Sulby Glen, a remote but enchanting location. Entering the Philadelphia Naval Shipyard, on 28 June 1960, she remained for a year and two days during which time her bridge was enclosed, her torpedo deck was modified to allow the installation of ASROC, and her seven-year-old 3 inch battery was replaced by a helicopter hangar and flight deck to accommodate the QH-50 DASH (Drone Anti-Submarine Helicopter) weapons system. On 1 July 1961, the "new" Meredith sailed for her new home port, Mayport, Florida. After refresher training, she got underway for a good will tour of various ports in the Caribbean and along the west coast of Africa from Freetown, Sierra Leone, to Cape Town, Republic of South Africa. While en route she collected oceanographic data which included piscatorial and avian surveys as well as hydrologic information.

The edge of Wollaton is also home to the Martin's Pond Local Nature Reserve which is jointly maintained by Nottingham City Council and Nottinghamshire Wildlife Trust. A new festival, Splendour in Nottingham, was relaunched in 2008 and is slowly developing into a popular festival, with large names such as Calvin Harris and The Pet Shop Boys performing there in 2010, and Dizzee Rascal in 2012.
