The texture of black bean tofu is slightly more gelatinous than regular douhua and the color is greyish in tone. This type of tofu is eaten for its earthy "black bean taste". Edamame tofu is a Japanese variety of kinugoshi tōfu made from edamame (fresh green soybeans); it is pale green in color and often studded with whole edamame.

Also, scientists have discovered that the deeper these creatures live, the more gelatinous their flesh and more minimal their skeletal structure.

Jellyfish, and more gelatinous zooplankton in general, which include salps and ctenophores, are very diverse, fragile with no hard parts, difficult to see and monitor, subject to rapid population swings and often live inconveniently far from shore or deep in the ocean.

The cell walls are composed of cellulose, though there may be also a superficial layer of a more gelatinous material of unknown composition. The storage material is starch, except in the oospore, where oil also occurs. This starch also accumulates in special storage structures, termed bulbils, which consist of rounded cells of varying size which are developed in clusters on the lower stem and root nodes. Macroscopically Ramaria primulina closely resembles R. flavosaponaria, but the former produces larger spores, has clamps, and flesh that is more gelatinous than soapy. R. flavosaponaria has fruiting bodies up to in size that are broadly obovate to circular in shape and cespitose or scattered. The irregularly shaped stipe grows up to with much aborted branching, giving an appearance like cauliflower. The flesh is white to yellow, does not bruise, but has a soapy texture without being gelatinous.

When grown in humid conditions, such as might typically be found in a temperate deciduous forest, Calostoma species develop a thicker, more gelatinous exoperidium (the outermost peridial layer). As the stalk expands, the exoperidium becomes sloughed off, exposing the endoperidum and a raised peristome—the ridge of tissue around the opening suggestive of the common name, "prettymouth". The exoperidium may help to protect the maturing gleba of late-fruiting species from harmful variations in temperature or humidity, or from insect predation.

American mycologist Harry Thiers reported Boletus aereus from California in 1975; a taxonomic revision of western North American porcini boletes in 2008 formally established them as a separate species, Boletus regineus. These differ from B. aereus by nature of their more gelatinous cap skin (pileipellis), and belong in a different porcini lineage. Boletus aereus is classified in Boletus section Boletus, alongside close relatives such as B. reticulatus, B. edulis, and B. pinophilus. A genetic study of the four European species found that B. aereus was sister to B. reticulatus.
