Robert Tatham (1634-1692) bought “the dwelling house called Hipping Hall” from William Gibson in 1668 and built the current Hall. The previous building dated back to the 15th Century and some the rooms were incorporated into the new Hall. Hipping Hall is a country house hotel on the border of Lancashire, Cumbria and North Yorkshire, near Kirkby Lonsdale. Opened in 2005 by chemist-turned- hotelier Andrew Wildsmith, the five-star retreat dates back to the 15th century and has nine bedrooms and a Four-AA-rosette restaurant serving a menu of locally sourced food. In Autumn 2010, Hipping Hall featured in an episode of BBC2’s The Trip – a series starring Steve Coogan and Rob Brydon, in which the pair embark on a restaurant tour of northern England.

Gunderloch works with 14 hectares vineyards, including vines in Niersteiner Pettental and Hipping. These are selected sites, capable to produce ″Grosses Gewächs″, top-level dry wines. The leading grape variety cultivated is Riesling with 80%. 6% burgundy and 5% Silvaner are notable as well.

A 2012 vintage Hipping Riesling of the winery Klaus Peter Keller, who had acquired exactly in 2010 the plot in the HippingWebsite Weingut Keller: "Official anniversary wine for the 60th anniversary of the Queen harvested" retrieved on 25 November 2012. therefore became the official wine for the Diamond Jubilee of Elizabeth II, which the Queen celebrated in 2012.

The estate stretches across the so-called „Roter Hang“ (red slope) with steep slope viticulture and presence of red slate in Nierstein and comprises part of the top vineyard sites „Orbel“, „Pettenthal“, „Hipping“ and „Ölberg“. The „Brudersberg“ site is in exclusive possession of „Heyl zu Herrnsheim“. St. Antonys vineyards in the Rheinhessen wine region are within the boundaries of the collective sites (Großlagen) of Spiegelberg, Rehbach and Auflangen, which are not displayed on the label. The basic wines are simply labelled with grape variety and estate name.

Advertisement for the sale of Hipping Hall in 1868 Edward Tatham (1763-1842) her eldest son was the next owner of the Hall. He married in 1786 Susanna Gibson and had three children. The building itself is a one-story, five-by-five-bay steel frame building on a poured concrete foundation faced in brick laid in English bond with a hipped slate roof pierced by two zinc-coated ventilators. The hipping is lower over the three central bays on the rear; a one-bay loading dock projects from that area. A molded brick watercourse sets off the basement, and the roofline is marked by a corbeled course giving the effect of a denticulated cornice. The western (front) facade is symmetrically composed around a centrally located, recessed segmented arch with a lintel of radiating voussoirs.

The house was originally the family home of the Tathams – a family of blacksmiths who catered for all those travelling on the old packhorse route from Yorkshire to Cumbria via Cowan Bridge. One of Hipping's main features is The Great Hall, now the dining room, which dates from the 15th century and is a balconied, beamed space. From there is a view of a 13th-century wash house complete with Gothic arch. Hipping Hall is surrounded on four sides by the magnificent landscapes of the Lune Valley, Lake District, Yorkshire Dales, and the Trough of Bowland.
