Traditionally, the main meal of the day has been lunch (Mittagessen), eaten around noon. Dinner (Abendessen or Abendbrot) was always a smaller meal, often consisting only of a variety of breads, meat or sausages, cheese and some kind of vegetables, similar to breakfast, or possibly sandwiches. Smaller meals added during the day bear names such as Vesper (in the south), Brotzeit (bread time, also in the south), Kaffee und Kuchen (, literally for "coffee and cake"), or Kaffeetrinken. It is a very German custom and comparable with the English Five-o'clock-Tea.

She had another son, Lindsay Millais Jopling, by her second marriage; the child was named after his two godfathers Sir Coutts Lindsay, founder of the Grosvenor Gallery and John Everett Millais. She achieved fair success in her career: her painting Five O'Clock Tea was sold for ₤400 in 1874. Jensen published her first and most famous cookbook in 1901. Titled Frøken Jensens Kogbog (Miss Jensen's Cookbook), it ran into a second edition the same year. In 1902, she published Frøken Jensens Syltebog (Miss Jensen's Pickling Book) followed by Five o'clock tea which contained a number of bread and cake recipes she had brought back from England. She went on to publish Hvad skal vi ha’ til Middag (What should we have for Dinner, 1903), Husholdningsbog (Housekeeping Book, 1904), Grønt- og Frugtretter (Vegetable and Fruit Dishes, 1906), Sommer- og Vinter Dessert (Summer and Winter Desserts, 1916) and Svampe paa 100 Maader (Mushrooms in a 100 Ways, 1916).
