In many dairy industries, salt is added to cheese as a color-, fermentation-, and texture-control agent. The dairy subsector includes companies that manufacture creamery butter, condensed and evaporated milk, frozen desserts, ice cream, natural and processed cheese, and specialty dairy products. In canning, salt is primarily added as a flavor enhancer and preservative. It also is used as a carrier for other ingredients, dehydrating agent, enzyme inhibitor and tenderizer.
It is cooked further for a few minutes before the tomato sauce and tomato paste mixture is poured into the pan. Beef stock, mushroom soup, or evaporated milk may also be added. This is sweetened with a bit of banana ketchup or brown sugar, and spiced to taste with salt and black pepper. In Mainland China, Hong Kong and Macau, grass jelly was traditionally served with sugar syrup. Now it is often served mixed with other ingredients, such as mango, sago, watermelon, cantaloupe, and other fresh or canned fruit, and condensed or evaporated milk. Raw milk is clarified and standardised to a desired fat to solid-not-fat (SNF) ratio, and is then heated to for several seconds. This heating process destroys some microorganisms, decreases fat separation and inhibits oxidation. Some water is evaporated from the milk and sugar is added until a 9:11 (nearly half) ratio of sugar to (evaporated) milk is reached. The sugar extends the shelf life of sweetened condensed milk.

Kulfi or Qulfi is a Hindustani word derived from the Persian Qufli (قفلی) meaning "covered cup". The dessert likely originated in the Mughal Empire in the 16th century. In 2014, the Canadian Food Inspection Agency evaluated the effect of fortification of foods with ascorbate in the guidance document, Foods to Which Vitamins, Mineral Nutrients and Amino Acids May or Must be Added. Voluntary and mandatory fortification was described for various classes of foods. Among foods classified for mandatory fortification with vitaminC were fruit-flavored drinks, mixes, and concentrates, foods for a low-energy diet, meal replacement products, and evaporated milk.
Argentinean flan and dulce de leche Most notably in Argentina, Chile, Peru and Uruguay, crème caramel is usually eaten with dulce de leche, whipped cream, or both (flan mixto). In Chile, it is often eaten with dulce de membrillo (quince jelly) or condensed milk. Garri is a creamy-white, granular flour with a slightly sour, fermented flavor from fermented, gelatinized fresh cassava tubers. Garri soakings is a delicacy that costs less than US$1 in Nigeria, Cameroon, Congo, Ghana and other parts of Africa, where cassava is cultivated. One can simply soak garri in cold water, add a bit of sugar and roasted groundnut (peanut) to taste, and add evaporated milk if one desires. Garri soakings prepared with coconut water are also popular.

Puding Diraja also known as Royal Pudding, this dessert was developed and served to the royal family of Pahang state. Its basic ingredients are pisang lemak manis (a local cultivar of banana), evaporated milk, prunes, candied cherries and cashew nuts. The pudding is garnished with jala mas and served with a cold sauce made from milk and cornflour. Nowadays it is popularly served during Ramadan as well as a special afternoon tea treat for the family on weekends.

While there are many variations in the recipe, it usually contains chicken strips in broth, onions, vegetables (mainly carrots, cabbage and celery), and macaroni noodles. It is cooked with evaporated milk to give it richer flavor. Sopas is normally associated with the cold, rainy season in the Philippines, and may thus be regarded as local comfort food.

Disodium phosphate or sodium citrate (or both) may be added, as well as an emulsifying agent.
A tres leches cake (translation: three milks cake) (Spanish: pastel de tres leches, torta de tres leches or bizcocho de tres leches) is a sponge cake—in some recipes, a butter cake—soaked in three kinds of milk: evaporated milk, condensed milk, and heavy cream. When butter is not used, the tres leches cake is very light with many air bubbles. This distinct texture is why it does not have a soggy consistency, despite being soaked in a mixture of three types of milk.

In Australia, post World War II, flummery was the name given to a different foodstuff, a mousse dessert made with beaten evaporated milk, sugar, and gelatine. Also made using jelly crystals, mousse flummery became established as an inexpensive alternative to traditional cream-based mousse in Australia. In Longreach, it was a staple food in the 1970s and in Forbes, it was a fall-back dessert in the 1950s. The American writer Bill Bryson described flummery as an early form of the blancmange dessert known in the United States.
Ohn no khao swè (; ) is a Burmese dish consisting of wheat noodles in a curried chicken and coconut milk broth thickened with gram flour (chickpea flour). The dish is often garnished with crisp fried bean fritters, sliced raw onions, chillies, crisp noodles, and slices of hard-boiled egg, and zested with lime or lemon juice and fish sauce. Due to the popular link between coconut milk and hypertension, a variation which uses evaporated milk instead of coconut milk is also available in certain restaurants. The rest of the ingredients are the same.
Lore Alford Rogers (7 February 1875 - 21 March 1975) was an American bacteriologist and dairy scientist. He is credited with discovering that butter made from pasteurized sweet cream remained fresher than that made from sour ripened cream, while suggesting that surplus milk could still be sold as concentrated sour milk products. He refined the steps for manufacture of high quality Swiss cheese and, new to the United States, production of Roquefort cheese. He was instrumental in finding ways to discourage fungal growth in sweetened condensed milk and preventing losses in evaporated milk from heat coagulation.
Iskrambol, also known as ice scramble, is a Filipino frozen dessert made from shaved ice with banana extract and evaporated milk with sugar (or condensed milk), topped with a variety of ingredients including powdered milk, marshmallows, strawberry syrup, chocolate syrup, pinipig, tapioca pearls, and sprinkles, among others. It is characteristically dyed pink. It is usually sold by street vendors and is a popular dessert among children for its bright colors and cheapness. The name is derived from the method of eating the dessert, wherein the ingredients are stirred ("scrambled") with the included straw.
After the beans are soft, evaporated milk, condensed milk, and coconut milk need to be added to the mix of the beans. Before adding the milk, the mixture is dark, but after adding the milk, it lightens up while boiling. Sweet potatoes and sugar are added for the rich and creamy taste of the dessert. The Snoqualmie Valley was settled by white Americans in the 1850s and 1860s following the relocation of the Snoqualmie tribe to reservations. The community of Tolt, an Anglicized name for the Tolthue River ( or ), was founded in 1865 and platted in 1902. Tolt was incorporated as a town on December 30, 1912, shortly after the arrival of the Milwaukee Road, which provided train connections to Monroe in the north. The valley was home to several dairy farms established in the 1900s, including a research farm for the Carnation Evaporated Milk Company.
Funmatsucha: instant green tea Instant tea is a powder in which water is added, in order to reconstitute it into a cup of tea. The earliest form of instant tea was developed in the United Kingdom in 1885. A patent was granted for a paste made of concentrated tea extract, sugar, and evaporated milk, which became tea when hot water was added. However, no notable developments were made until spray drying technology allowed for drying the tea concentrates at a temperature which did not damage the flavors of the product.

The number of dairy cattle in Bolivia in the late 1980s was unknown but was well below what the country needed to meet domestic demand. The rate of milk consumption among Bolivians was among the lowest in the world. In 1988 Bolivia consumed 130,000 tons of milk, 80,000 tons from its five dairies, 23,000 tons in donations from developed countries, and the rest in contraband, mostly in the form of evaporated milk.
In ensuing war years, several revisions were made to the original specification, but their intended purpose of providing one day's food for ten men, remained unaltered. Within the daily plan, complete group meals were specified for breakfast and supper while a partial dinner unit was provided for the luncheon meal. A frappé can be made with a cocktail shaker or, more commonly today, with an electric milk frother or milkshake machine. First, instant coffee (traditionally Nescafe), sugar (optionally), and a little water are shaken or blended together until a thick foam is made. Seven dishes are a must for these occasions — tabakh maaz, rista (meatballs in a red, paprika-saffron-fennel spice gravy colored with dyer's alkanet), rogan josh, daniwal korma (lamb roasted with yoghurt, spices and onion puree, topped with coriander leaves), aab gosh (lamb chunks cooked with a fennel-based spice mixture, cardamom and partially evaporated milk), marchhwangan korma (chicken legs/thighs cooked in a spicy browned-onion sauce) and gushtaba (meatballs cooked in a spicy yoghurt gravy). The main course usually ends with gushtaba. The Gushtaba is a large meatball which signals the end of the main course. After that, desserts are served.
The nature of the "medium" cheese is less certain, and may have referred to preserved fresh cheeses, evaporated milk or cheese similar to Indian paneer, where the addition of vegetable juices makes the milk coagulate. Traditionally, oliang is brewed with a tungdtom () (Thai coffee filter), a tea/coffee sock with a metal ring and handle to which a cotton cloth bag is attached, It is also used for making Thai tea. To make Thai coffee, put the oliang into the coffee sock and pour boiling water through it into a carafe. Let the bag steep for approximately 10 minutes until strong.
