The increased acidity causes the milk proteins (casein) to tangle into solid masses, or curds. Milk that has been left to sour (raw milk alone or pasteurized milk with added lactic acid bacteria) will also naturally produce curds, and sour milk cheeses are produced this way.
QimiQ is a dairy product consisting of 99% light cream and 1% gelatine, patented by HAMA Foodservice GmbH. The product was invented by Hans Mandl and Rudolf Haindl in 1995, and was designed to replace artificial emulsifiers and stabilizers by blending with liquids such as alcohol or vinegar; it also emulsifies with oil. In QimiQ, gelatine is already included, so for certain recipes, there is no need to soak gelatine sheets in liquid and then add them. QimiQ cannot be over-whipped like conventional whipping cream.

A cream soup is a soup prepared using cream, light cream, half and half or milk as a key ingredient. Archer county is one of the more prominent areas of dairy product production in the state of Texas. The two southeastern Archer County cities of Scotland and Windthorst share 37 functioning dairy farms as of 2019. The artist Anatoli Lvovich Kaplan was born (1902) and brought up here, as was former NHL hockey player Sergei Bautin. Rahachow also has a popular dairy product factory in it, whose products are supplied across Russia, Ukraine, and Belarus.
Kaymak is a creamy dairy product similar to clotted cream, made from the milk of water buffalo, cows, sheep, or goats in Central Asia, some Balkan countries, some Caucasus countries, Turkic regions, Iran and Iraq. The traditional method of making kaymak is to boil the milk slowly, then simmer it for two hours over a very low heat. After the heat source is shut off, the cream is skimmed and left to chill (and mildly ferment) for several hours or days. Kaymak has a high percentage of milk fat, typically about 60%.

Maple butter, also known as maple cream or maple spread, is a confection made from maple syrup, by heating the syrup to approximately , cooling it to around , and beating it until it reaches a smooth consistency. It is usually made from Grade A Light Amber syrup (sometimes known as Fancy), and is a light tan color. The consistency of maple butter is light and spreadable, very similar to the consistency of peanut butter. Its name comes from the fact that it is "buttery" or "creamy" smooth, not because it contains any dairy product (it is dairy-free).
The Italian Gardeners and Ranchers Association Market Building, also known as the Italian Market, in southeast Portland, Oregon in the U.S. is a two-story commercial structure listed on the National Register of Historic Places. Built of concrete in 1922, it was added to the register in 1989. Occupying an entire block of the Central Eastside Industrial District, the square structure has a flat roof, large loading bays, multi-paned casement windows, and a full basement. In believing that the dairy industry could improve the living standard and nutrition standard of citizens and thereby promote rural economic development and compensate food inadequacy, Wei-Chuan established the dairy product department in the beginning of the 1960s out of the company's insistence on establishing a “public company”. This started the diversification of Wei-Chuan into an integrated food manufacturing company.
Pule cheese or magareći sir, is a Serbian donkey cheese made from 60% of donkey milk of Balkan donkeys and 40% of goat milk. Pule is produced in Zasavica Nature Reserve by the idea of Slobodan Simić, former MP Serbian and Zasavica Special Nature Reserve Manager. A distinctive dairy product of Serbian cuisine, pule is reportedly the "world's most expensive cheese", fetching 1,000 Euros per kilogram. It is so expensive because of its rarity: there are only about 100 jennies in the landrace of Balkan donkeys that are milked for Pule-making and it takes 25 litres (6.6 gallons) of milk to create one kilogram (2.2 pounds) of cheese.

Inside the Maiden's tomb chamber was her coffin, which was made of a solid larch wood tree trunk decorated with leather appliqués depicting deer figures. The chamber also contained two small wood tables with tray-shaped tops, which were used to serve food and drink. Horsemeat and mutton had been placed on the tables; the residue of a dairy product, perhaps yogurt, was found in a wooden vessel with a carved handle and stirrer; and some kind of beverage was served in a horn cup to sustain her on her journey. The Ice Maiden and her horses were oriented with their heads toward the east, as was the case in other Pazyryk burials.

Probiotics are increasingly being used in numerous dairy products such as ice cream, milk powders, yoghurts, frozen dairy desserts and cheese due to their important health benefits. But, low viability of probiotic bacteria in the food still remains a major hurdle. The pH, dissolved oxygen content, titratable acidity, storage temperature, species and strains of associative fermented dairy product organisms and concentration of lactic and acetic acids are some of the factors that greatly affect the probiotic viability in the product. As set by Food and Agriculture Organization (FAO) of the United Nations and the World Health Organization (WHO), the standard in order to be considered a health food with probitic addition, the product should contain per gram at least 106-107 cfu of viable probiotic bacteria.
It is necessary that the bacterial cells remain stable and healthy in the manufactured product, are sufficiently viable while moving through the upper digestive tract and are able to provide positive effects upon reaching the intestine of the host. Cell microencapsulation technology has successfully been applied in the food industry for the encapsulation of live probiotic bacteria cells to increase viability of the bacteria during processing of dairy products and for targeted delivery to the gastrointestinal tract. Apart from dairy products, microencapsulated probiotics have also been used in non-dairy products, such as TheresweetTM which is a sweetener. It can be used as a convenient vehicle for delivery of encapsulated Lactobacillus to the intestine although it is not itself a dairy product.
A related recipe for skyr, a cultured dairy product, appears in the early 13th century. The earliest surviving recipe for caudle, from 1300–1325, is simply a list of ingredients: wine, wheat starch, raisins, and sugar to "abate the strength of the wine". Another recipe from the late 14th century has more ingredients and more details on the cooking procedure: mix breadcrumbs, wine, sugar or honey, and saffron, bring to a boil, then thicken with egg yolks, and sprinkle with salt, sugar, and ginger. A 15th-century English cookbook includes three caudle recipes: ale or wine is heated and thickened with egg yolks and/or ground almonds, then optionally spiced with sugar, honey, saffron, and/or ginger (one recipe specifically says "no salt").

Congestion on the Wellington – Palmerston North section of the NIMT led to the rescheduling of the Wellington – Napier freight services to run via the Wairarapa from 14 August 1995. Following the daylighting of Tunnels 3, 4, 5 on the Palmerston North - Gisborne Line in the third quarter of 2008, and thus the removal of the impediment to running hi-cube containers through the Manawatu Gorge, the Wellington – Napier freight services were diverted to their original route from late 2008. With the completion of an upgrade at Fonterra's Mangamutu Dairy Factory, including the installation of a new milk powder drier and railway siding, trains will no longer be required to transport milk from Pahiatua to Fonterra's Hawera facility for further processing. However, trains will still be used to transport the processed dairy product.
In 1921, the Cheshire School of Agriculture opened at Reaseheath, near Nantwich, offering tertiary-level education in agriculture for the first time. Their chance meeting initiates an "ongoing battle" which eventually unfolds into a somewhat love triangle between them and her old hometown oppa, Ki-chul (Kang Eun-tak).
