Some species, such as Tabanus bovinus, prefer bovine animals and are less harmful to humans. The genus contains hundreds of species and many species groups.

The European Union's EUROP grid method of carcass classification was implemented in 1981. European Economic Community Regulations (EEC) No. 1208/81 and No. 2930/81 were enacted to facilitate the application of a community scale for the classification of carcasses of adult bovine animals. This was to ensure the uniform classification of the carcasses of adult bovine animals in the EEC and make the definitions of conformation classes and fat classes more precise. The need arose for a common grading scale when member states of the EEC began operating in the common beef market in 1968 (EEC) No. 805/68 and price reporting to the EC became mandatory.

The system covers cattle and also other bovine animals such as water buffalo, yak, bison and hybrids. The number and passport remain with the animal throughout its life, and are recorded by the slaughterhouse at its death, allowing traceability of the beef. The BCMS central database is called the Cattle Tracing System, and works alongside the physical passport to record the births, deaths and movements of all cattle.

Tabanus bovinus, sometimes called the pale giant horse-fly, is a species of biting horse-fly. As the scientific name suggests, it prefers bovine animals as the source of blood, although it may bite other kind of mammals as well. The insect is relatively large for a horse-fly, adults usually being 25–30 mm long. Like most other horseflies, its compound eyes are very colorful with stripe-like patterns.

According to the Halal Food Authority (HFA) in the UK, poultry (chickens, turkeys and ducks) can only be immobilised prior to slaughter using electric water baths, while ovine animals (lamb, sheep and goat) can only be stunned using electric tongs. The logo of the British Cattle Movement Service The British Cattle Movement Service (BCMS) is the organisation responsible for maintaining a database of all bovine animals in Great Britain; Northern Ireland has a separate database maintained by the Department of Agriculture and Rural Development. It was established in the wake of the mad cow disease crisis in the UK, and is part of the Rural Payments Agency. Other member states of the European Union have similar cattle tracing systems. Every bovine animal in the United Kingdom (as elsewhere in the European Union) has a unique number, shown both on an ear tag in each ear and on a paper cattle passport which is held by the current keeper of the animal.
